Yam
Sometimes mistakenly called the sweet potato and also named "Adamwanga" Yam is a very important and popular staple food in west Africa. Like Okra it can be made into many delicious dishes such as Yam stew. To make it you will need:
- 2 c peeled & sliced yams .
- 1 tbsp Braggs liquid aminos or tamari .
- 1 c uncooked brown rice .
- 2 c sliced collard greens or kale .
- 4 c vegetable broth .
- 1 c canned chick-peas .
- 1/4 tsp salt .
- 1 sliced onion .
- 1/4 c peanut butter .
- 1/2 tsp black pepper .
- 2 tbsps fresh lemon juice .
- chili sauce
Next add the onion & saute over med-heat/flame for 5 mins, adding more stock if necessary.
Then put in the remaining stock, yams, chickpeas, rice & salt; simmer for 45 mins.
In a small bowl, mix the peanut butter with 1/2 cup of liquid from the stew to make a smooth paste and stir into the stew along with the greens & cook for 5 mins then you must stir in the lemon juice, pepper & tamari or Braggs; add chili sauce to taste.
Finaly adjust seasonings & serve.
